Jen plans her next move.Harvest took place on of 22nd March. Beaume 14.2, pH 3.33, TA 7.3. Please refer to Montepulciano harvest update below for more information on Beaume, pH and TA. We were all surprised how well the pinot grigio held her acid and how long the grapes took to reach physiological ripeness. Physiological ripeness refers to the ripeness of the seeds in the grapes and the pulp around the seeds. Sugar ripeness only refers to the amount of sugar (potential alcohol).
